Well today, we’re using one of my favorites from that list and putting it into a big bowl of overnight quinoa. This turmeric infused breakfast bowl is bursting with nutrition – we’re talking fiber-rich oats, protein-packed quinoa, omega-3 filled chia seeds, low glycemic coconut sugar, anti-inflammatory turmeric, blood sugar-stabilizing cinnamon and more.

It’s the perfect breakfast to wake up to when you’re in need of something cozy and comforting OR you’re feeling a bit under the weather because you may or may not have had a leeeetle bit too much fun on NYE. Either way, turmeric overnight quinoa will take care of you.

Now I know we talked about detoxing on Friday, but in addition to all healthy foods we should eat, I also wanted to talk about healthy beverages, in particular, adult-friendly beverages 😉

Truth be told, I’ve never really talked much about alcoholic beverages on the blog and I often get asked what my stance is on drinking. So, here it is: moderation is the key to everything. Sounds simple right? Well, that’s because it is!

Now some may argue that drinking in any form is “unhealthy.” I disagree; I think it’s really about making smart choices when it comes to the drinks you choose.

Many of us here are gluten-free – whether that’s Celiac disease, an intolerance or simply a personal choice – and when it comes to alcoholic beverages, it can sometimes feel a little limiting. Our options are either gluten-free beer, wine or hard alcohol.

I’m not a fan of beer – it makes me feel bloated, gassy and I don’t think it tastes very good. Wine is a fave, but it’s a little strong sometimes and often leaves me with a headache in the morning. And hard alcohol is…well a little aggressive for many situations.

Doesn’t leave us with very many options now does it? Well, well, well…

How to make the ultimate brunch cocktail with only 2 ingredients...and it's not champagne + orange juice!

SpikedSeltzer.

Just as it sounds, SpikedSeltzer is basically seltzer with alcohol, but made in a totally revolutionary and healthy way.

To pair with my big old bowl of turmeric overnight quinoa, I made a SpikedSeltzer cocktail that’s just a can of their Indian River Grapefruit flavor with a few slices of fresh orange. It’s simple, easy and delicious.

And let’s face it, sometimes it’s the hair of the dog that bit you that brings our spirits back to life after a long night out!

And with that my friends I think it’s time to leave you with this: a big bowl of overnight quinoa. I’m just about ready to snuggle up with this on my lap, my puppy beside me and my new favorite TV show on (it’s Sons of Anarchy in case you were wondering).

Even though this is served cold (well actually you can totally heat it up if you wanted too), it’s pretty darn cozy. The orange juice gives it a nice subtle sweetness, the flaked coconut gives it a simple crunch and the toppings give it all decadence that a tasty brunch recipe needs.

Ingredients
  

for the overnight quinoa:

for the cocktail:

  • 1 can Indian River Grapefruit SpikedSeltzer
  • 2 orange slices cut into quarters

Instructions
 

  • Add all the ingredients for the overnight quinoa into a large mason jar. Stir together, put on the lid and refrigerate for at least 2 hours.
  • When ready to serve, transfer to a bowl and top with desired toppings. (I went with a dollop of almond butter, more coconut flakes, chia seeds, hemp seeds, orange zest, pecans and a drizzle of honey...oh yeah!)
  • For the cocktail: add sliced oranges to a glass. Pour SpikedSeltzer over the oranges and enjoy!
